Ingredients:

To make vada pav, you’ll need the following ingredients:

– 2 cups of besan (gram flour)
– 1/2 cup of water
– 1 teaspoon of salt
– 1/2 teaspoon of turmeric powder
– 1/2 teaspoon of red chili powder
– 1/2 teaspoon of amchur (dried mango powder)
– 1/2 teaspoon of garam masala
– 1/2 teaspoon of carom seeds (ajwain)
– 2 tablespoons of oil for frying
– 4 pav (Indian bread rolls)
– 2 tablespoons of oil for toasting pav
– 1 tablespoon of butter
– 1/2 cup of green chutney
– 1/2 cup of red chutney
– 1/2 cup of mint chutney
– 1/2 cup of onion slices
– 1/2 cup of tomato slices
– 1/2 cup of potato slices
– 1/2 cup of cucumber slices
– 1/2 cup of coriander leaves
– 1/2 cup of sev (fried gram flour noodles)

Instructions:

1. In a large bowl, mix besan, water, salt, turmeric powder, red chili powder, amchur, garam masala, and carom seeds.
2. Stir the mixture until you get a smooth, thick batter.
3. Heat 2 tablespoons of oil in a pan over medium heat. Drop small spoonfuls of the batter into the oil and fry until golden brown. Flip the vadas halfway through the frying process. Once done, remove them from the oil and set them aside on a paper towel to drain the excess oil.
4. Toast the pav by brushing them with 2 tablespoons of oil and grilling them on a tava (flat pan) or in a toaster oven until they are golden brown.
5. In a separate pan, heat 1 tablespoon of butter over medium heat. Add the onion slices and cook until they are golden brown. Add the tomato slices and potato slices, and cook until they are soft.
6. In a small bowl, mix the green chutney, red chutney, and mint chutney. Set aside.
7. Assemble the vada pav by placing a toasted pav on a plate. Add a layer of potato slices, tomato slices, cucumber slices, and onion slices. Top it with a fried vada and some sev. Drizzle the chutney mixture over the vada and pav.
8. Garnish with coriander leaves and serve immediately.

Enjoy your homemade vada pav with a cup of tea or coffee for a delicious and satisfying snack experience!
