How to Prepare Curd Rice

Curd rice, also known as thogayal rice, is a popular and delicious South Indian dish that is perfect for any meal. Ingredients

Before you start, gather the following ingredients:

– 1 cup of cooked rice
– 1 cup of yogurt
– 1/2 cup of water
– 1 teaspoon of mustard seeds
– 1/2 teaspoon of urad dal
– 1/2 teaspoon of chana dal
– 1 green chili, slit
– 1 sprig of curry leaves
– 1/4 teaspoon of turmeric powder
– Salt to taste
– A pinch of asafoetida (hing)
– 2 tablespoons of oil

Instructions

1. First, rinse the cooked rice under cold water until the water runs clear. This step is essential to remove any excess starch from the rice, ensuring a smooth and non-sticky texture in the final dish.

2. In a bowl, whisk the yogurt with 1/2 cup of water until it reaches a smooth consistency. Set this mixture aside.

3. Heat the oil in a pan over medium heat. Add the mustard seeds, urad dal, chana dal, and asafoetida. Allow the seeds to splutter and the dals to turn golden brown.

4. Add the green chili and curry leaves to the pan. Sauté for a few seconds until the curry leaves turn crisp.

5. Add the turmeric powder to the pan and mix well. Let it cook for a minute.

6. Pour the whisked yogurt mixture into the pan, stirring continuously to prevent lumps from forming.

7. Add the washed rice to the pan and mix well. Cook the rice for about 5 minutes, stirring occasionally. The yogurt should start to thicken and coat the rice.

8. Season the curd rice with salt to taste and adjust the consistency by adding more water if needed. Cook for another 2-3 minutes, ensuring the rice is well-cooked and the yogurt is well-integrated.

9. Turn off the heat and let the curd rice sit for a few minutes before serving. Garnish with fresh coriander leaves and serve hot with your favorite side dishes, such as sambar, rasam, or any spicy curry.
